Lime Rice or Lemon Rice is a very balanced ayurvedic dish. It balances all three doshas viz., Vata, Pita and Kapha.
Ingredients:

- Basmati rice - 1 cup
- Urad dal or mung dal - 1 tbsp
- Water - 2 cups
- Fresh lime juice - 1 tbsp
- Mustard seeds - 1/2 tbsp
- Turmeric powder - 1/2 tbsp
- Hing - 1 pinch
- Whole cumin seeds - 1 tbsp
- Ghee - 2 tbsp
- Coriander Leaves - 1 tbsp
- Grated coconut - 2 tbsp
- Salt - To taste
